karadaiyan Nonbu Adai

Sweet Adai


Rice FLour - 1 cup (Sifted)

black eyed peas - 1 tablespoon

ROasted and grinded)jaggery - 1 cup

Water 1/2 cupcardamom for fragrance

coconut - chopped into small pieces (Optional)

RIce flour : Jaggery (1:1)

Jaggery : WAter (1:1/2)

Ghee 1 tablespoon

Salt Adai


Rice FLour - 1 cup (Sifted)

black eyed peas - 1 tablespoon

Water 1/2 cup

Ginger 1tsp finely chopped

salt to taste

coconut - chopped into small pieces (Optional)

green chilli - 1 large finely chopped

Mustard Seed 1tsp

Jeera 1 tsp

Hing - a pinch

Channa dal 1 tsp

Ghee - 1 table spoon

Directions FOr Sweet Adai

  • Dry Roast the sifted rice flour in a frying pan till it has the consistency of a kolam powder
  • Don't make it brown.
  • In another pan Melt the jaggery in the water and strain it using a filter, and again add it in the pan.
  • once it reaches boil add a pinch of cardomom, coconut and rice flour to it.
  • Stir continuosly and dont let it stick to the pan.
  • Stir until the mixture combines together and looks like a smooth dough
  • add ghee to it and mix well.
  • Once it cools down, make the dough into lemon sized ball and flatten it and make a hole in the middle so that it gets cooked around all the sides equally.
  • Then presure cook them in a pressure cooker / Idli maker for 5-6 mins. Sweet Adai is ready :)

Salt Adai (Uppuadai)

  • To a heating pan add ghee and then add mustard seeds.
  • Once the mustard seeds splutters, add jeera, channa dal and Urad dal and stir until the dal turns into golden brown,
  • add water and let it boil for a minute.
  • Then to the boiling water, add a pinch of hing, green chilli, ginger, coconut and salt.
  • Then add the rice flour and stir continuosly.
  • Make sure the it forms a dough and while making balls it shouldn't stick in the hand.
  • As we did for Sweet adai, after it cools down, make a ball, flatten it, amke a hole in the middle and pressure cook it for 5-6 mins.
