Idiyappam (String Hopper)
Idiyappam or rice noodle is a traditional Sri Lankan and south Indian recipe. Traditionally the rice is soaked, dried and grind into fine powder. But to make a shorter and easier version i used Rice flour in my recipe. Believe me i can be made in less than 15 mins.
Though i have had this dish so many time at home and at hotels, I still remember the first time i really enjoyed eating this dish. It was after midnight i traveled back home from my college for holidays. My brother got me this dish from some road side hotel for my dinner because it was the only shop open at that time. Oh My Goodness !!! It was the most delicious Idiyappam and Kurma i ever had.
Preparation time: 10 mins
Cooking time : 15 mins
Serves - 4 - 5 ( Normal idiyappam serving)
- Rice flour - 1 cup
- salt - to taste
- Water - 1 - 1 1/2 cup
- Oil - 1 tbsp
Prepare the steamer:
If you have the idiyappam steamer heat (Medium to medium high) it by adding water. I just wanted to try making without the steamer or cooker, so in my case i just used a pan and a small shallow plate so that i can keep the idiyappam on top of it so that it does not get wet and covered it with a lid with no valves / opening.
Making the Dough:
In another pan add rice flour and dry roast it for couple of minutes. but dont turn it brown. To that add salt and mix well. Then to that add water and slowly using a laddle mix and for a dough. the rice flour will tend to form a dough around the laddle and it wont stick to the pan. switch off the stove and knead the dough applying oil.
Then in another plate take a small dumpling of dough and press it using either a idiyappam press / Savory / Murukku press and place it on top of the shallow plate kept on the steamer and steam it for 5 mins or less.
- If you are using idli plate leave the bottom one empty and do not add too much water.
- If you doing the way i posted, do not open the lid often.
- The dough will be easy to press if it hot.
- Some people like to include some grated coconut on the top while steaming, Its totally your preference.
Serve hot with some Sweetened coconut milk and jaggery or
