Beetroot Soup

GO PURPLE  today with this YUM soup :) Make sure to get extra beetroots from market to make this delicious everyday beet soup :) So simple to make and lots of fiber !! There are various versions of beetroot soups online. Just updating own version which myself and my husband love to have. Try and let me know if you like it too :)

It is a complete diet and tastes YUMM with the bites of vegetable chunks and tastes heavenly when had with couple of table spoons of cultured yogurt or buttermilk.

Preparation time: 10 mins

Cooking time: 20 mins

Serves : 4 cups


  • Beetroot - 1 (Peeled and shredded)
  • Potato - 1 medium
  • carrot - 1 
  • Onion - 1 cup (Finely chopped)
  • Butter - 1/2 tbsp
  • garlic - 3 cloves (minced)
  • salt - to taste
  • pepper - to taste
  • Butter milk / curd - about 3 tbsps for a cup or to taste
  • Vegetable broth / Water- 4 cups 


In a wok / pan, melt butter and to that add minced garlic and saute until it turns golden brown. Then goes in the chopped onions and saute until it turns translucent.

Once the onions turn pink add in the shredded beetroot, carrots and potato to that along with water or vegetable broth and bring it to boil. Once it starts boiling reduce the flame to medium heat and cover it with the lid and let it cook until all the veggies are nice and tender.

Dilute with water if necessary. Add salt and pepper to taste. Finally serve with some chilled buttermilk or yogurt on top.
