Sweet Puran Poli

My mom makes delicious puran poli's. I always helped her while making poli and never asked her the recipe until one day my husband asked me to make !! :)

It is not so difficult to make if few instructions are followed correctly. Since my mom or mother in law are not near me I was afraid if I had made it in wrong consistency it would spoil the entire recipe but fortunately it was perfectly fine.. HAPPY ME !! :)

Preparation time: 30 mins

Soaking/waiting time: 4 - 6 hours (4 hours at least)

Cooking time: 2 mins for each poli

INGREDIENTS:

TO MAKE PURAN: 

  • Channa Dal - 1 cup

  • Shredded coconut - 3/4th cup or 1 cup (to taste)

  • Grated Jaggery - 1 cup

  • Cardamom/ Elachi powder - 1tsp

TO MAKE THE DOUGH:

  • All purpose flour / Maida flour - 1 cup

  • Water - 1/2 cup or as required

  • Turmeric powder / food color - a generous pinch.

  • Oil - 3-4 tbsp (for greasing the dough)

  • Ghee - To make poli

DIRECTION:

Before starting, in a bowl soak 1 cup of Channa dal in a cup of water for 4 hours.

TO MAKE THE DOUGH:

In a mixing bowl sift the maida / all purpose flour and to that add turmeric or any food color you are using. To that slowly add water and make a nice smooth dough. Knead it for at least 5 mins and grease it with oil and let it sit in the counter until the stuffing is prepared.

Note:

  • The dough should be little bit moisty than the chapati dough, at the same time it should not stick in your hand.

  • Add water slowly so that you will get the correct consistency.

  • Grease with enough oil, so that when you make poli the dough balls wont stick to the surface at which you are making.

Drain the water from the soked channa dal and place them in a paper towel. so that all the water from the channa dal drains. Its is important because the puran/ stuffing cannot have water content in that.

Once the water is drained in a blender add the channa dal, jagger and coconut and blend into a smooth paste

If you need water add the drained water from channa dal to that. But make sure the paste should form a thick dough. Try to grind them using very little water, I know it can be tedious and painful but it is worth the patience :) Believe me. You wont believe i sat down in the kitchen floor while grinding the puran. :)

 Once it is grind into fine paste add cardamom powder to that and mix well.

Note:

  • while grinding use little quantity so that you can manage easily.

  • keep stirring once in a while it tends to stick to the sides of the blender.

  • if your are grinding in multiple batches add jaggery in each batch so that the water in jaggery will help to grind into a fine paste.

  • Finally do a taste test and adjust the Stuffing/puran to your taste :) if you want more sweet add little more jaggery.

once the stuffing is prepared, grease a small banana leaf / wax paper and your palm with ghee, then pinch a small piece of kneaded dough and flatten it in the greased surface.

then on top of it place a big lemon sized filling and close around the edges.

after closing slowly flatten it and spread the poli in a fine circle using your fingers. You can also use rolling pin but be-careful and don't press it hard.

While spreading with hand make sure you spread evenly, always spread gently from the center to the corners.

Then roast them in a medium hot frying pan for a minute on both sides.

Note:

  • Definitely use a banana leaf / wax paper and grease it so that it wont stick to the surface while taking it and will be easy to handle.

  • Make the poli for your desired size just make sure the dough's ball size should be smaller than the stuffing's ball size. Because the Maida/all purpose flour is elastic in nature.

  • Roll the poli real nice and thin so that each bit will taste heavenly and make sure the bite is more of puran filling and less of dough.

Mouth watering poli is ready. Tastes delicious when served hot and apply ghee on top of the surface :) I know what you think. Yes I am definitely FAT :) When you do something do it right :)
