Bhatura | How to make bhatura

There are many different recipes online for making Bhatura. All of them were good but with this recipe bhatura fluffed up really really good. Sorry don't mind the shape the culprit was all purpose flour not me ;)

Preparation time: 15 mins

Waiting time: 1 hours at least

Cooking time: 15 - 20 mins

Serves - 4 / 5 bhatura's

INGREDIENTS:

  • Maida / All purpose flour - 1 cup

  • Salt - to taste

  • Sugar - 1/2 tsp

  • Yogurt - 1/4 cup

  • Warm water - (1/4 cup)

  • Oil for deep frying and for drizzling on top of the dough

DIRECTION:

Preparing Dough:

In a large mixing bowl, sift in Maida / All purpose flour, to that add salt, sugar, yogurt and oil to that then mix well.

Then add in little bit of water at a time and knead the dough for at least 4-5 minutes until the dough is soft. If dough is too thick and not able to form a dough then add 1 - 2 tbsp's of warm water. Be careful while adding water.

Once the dough is prepared drizzle few drops of oil on top and stretch it to get the gluten activated. Then fold the dough and cover it with a damp cloth or bowl and leave it in a warm place to rest for at least for 1 hour.

Note:

  • You can also add 2-3 tbsp's of semolina while kneading the dough to make it slightly crispy and stay fluffed up for a while

  • Kneading the dough for atleast 5 - 6 minutes really helps to get a soft bhatura.

  • While kneading if the dough is sticking, add in tsp of oil at a time.

Making Bhatura's:

In a Wok add oil and heat it on medium heat.

Pull small part of the dough and roll it to 1/4 inch thickness. (size as desired, just make sure it has enough place to float and puff in the wok)

Roll equally around all the edges and drop them gently into the oil. Before it comes up, using a ladle start pouring oil on top while gently rotating.

Once it fluffs up wait for it to be cooked on that side then turn over and cook the other side.

Note: 

  • Pouring the oil over helps the sides cooked and fluff up like ballons.

  • Keeping the oil on medium heat is a sweet spot for frying bhaturas. The medium high temperature will make it brown. The low temperature will make it flat.

  • Serve Hot with Channa / chole masala !
