Carrot dates payasam

Here is a simple dates payasam. This is definitely one of the easiest way to for me to sneak in dates into my daughters diet. A great way to get iron. She is not a big fan of sugar (which is very good), but because of it she has no interest in fruits. The only fruit she loves is banana. If you have any little one like that. Here is a great way to sneak in fruits and veggies in the name of payasam.

I made this in pressure cooker. But the same can be translated to stove top in a sauce pot.

Preparation time : 15 mins

Cooking time - 20 mins

Serves - 4 - 6

INGREDIENTS

  • Carrot - 2 cups | peeled and chopped

  • Dated - 1 cup | roughly 8 - 10 | Pitted

  • Milk - 3 cups | Any milk of choice | Whole milk or almond milks works best

  • Water - 1 cup

  • Almonds - 10 pieces | Peeled

  • Cardamom powder- A generous pinch

  • Saffron strands - A few

Direction

  • Start by Microwaving the almonds in little water for 1 min. The skin should peel right off.

  • Now to that add in chopped carrots, pitted dates, almonds in the instant pot.

  • Then add in milk of your choice, water (if needed), cardamom powder and saffron strand

  • Now close the lid and set the instant pot to porridge mode and cook on high pressure for 10 mins. Keep the vent sealed

  • When the pressure is naturally released, blend it into a smooth paste.

  • Enjoy cold with some almond silvers on top.
