One of the easiest sweets to make during diwali is maa laddu. Uses only 3 ingredients and a perfect beginner recipe. You can make the mix ready and add ghee later. Great to enjoy in batches. Also a great project to include kids as no to less cooking is required.

Serves - 20 - 30 ladoos based on the size rolled

INGREDIENTS

  • Pottukadalai (Roasted channa dal / bengal gram) - 1 cup

  • Sugar - 1 cup

  • Cardamom / Elachi - 1/8 tsp

  • Cashew - 15 (Optional)

DIRECTION

  • Start by dry roasting each ingredients separately on low flame.

  • Roast just until its starting to give out aroma

  • Let pottukadalai come down to room temperature before grinding to fine powder

  • Meanwhile measure 1 cup sugar and grind to fine powder.

  • Then sieve into fine mesh liner to avoid any lumps or coarse pieces.

  • To that add cardamom powder and roughly crushed cashew pieces into the mixture

  • This mixture can be stored in the airtight container until necessary

  • Melt 1/4 cup ghee and add it to the mix and start rolling

  • If you are making a big batch, keep melting ghee and roll in batches.

Notes

  1. I prefer grinding pottukadalai and sugar separately, since they need different time to grind. Also gives leverage to add more or less sugar based on preference.

  2. If cardamom powder is not available then grind together with sugar. Few (4 or 5) pods should work.

  3. Measuring helps after grinding as proportion varies later.

  4. Adding cashew will add great texture to the laddu.

  5. For brittle laddu, add less ghee and for fudgy ladoo add more ghee. We like brittle kind of laddoo.
