Pavarkkai (bitter gourd) curry in oven | No fry bitter gourd curry in oven | Varutha curry in oven

Ever since I started making varthukari in convection oven, I just found myself having a lot of handsfree time. I have been getting a lot of personal messages to update the recipe made in oven after sharing the cooking stories in instagram and facebook. . The only roast I don’t make in oven is potato. That recipe is going to get updates in the blog soon. But I do make small potato roast in the oven. I make it in onion tomato base. The chettinadu style potatoes comes very well in oven, it is a perfect dump and go recipe. I have also been experimenting with subzi recipes in oven.

INGREDIENTS

  • Bitter gourd

  • Salt - taste

  • Sambar powder

  • Oil

  • Curry leaves

  • Jaggery powder (optional)

DIRECTION

The method is fairly simple. First of all you need to check the following.

  1. Does your oven have convection mode?

  2. Does it have roasting mode?

My oven has convection roast option. I have also used an oven without convection or roast option. I simple use baking mode. In baking mode you need to preheat the oven to the preferred setting at least 20 mins before cooking. The convection mode in my oven doesnt require that much time

Once you figured that out, have your bitter gourd cut into small equal sized pieces. Small tip - I used sharp spoon to get the seeds off the bitter gourd.

  • Turn the oven on - Convection Roast - 450 F - 40 minutes (it will show 25 - 30 mins cooking time). If there is no convection mode, preheat the oven to 450 F 20 mins before cooking and bake for 20 - 30 mins

  • In a oven safe dish oil the surface, it avoids food sticking to the pan. I use my handy dandy all clad pan.

  • Now transfer all the cut bitter gourd into a bowl and to that add Oil, Sambar powder, Salt and mix well.

  • Then spread the mix into the oil smeared pan and place it in the oven. Remember to wear oven mitts

  • Stir once half way through cooking. Remove from oven carefully and garnish with some jaggery powder if you need.

  • Tadaa !! bitter gourd fry is done without baby sitting an sweating.
