Vegetable Paneer Jalfrezi

I had few left over potatoes and capsicum. It is one of the best dish to do with leftover veggies. You can even use green beans, carrot, cauliflower. But i just used potato,capsicum,tomatoes, onions and paneer.

It is so simple to prepare yet so very delicious. The very first time i had vegetable jalfrezi was at a restaurant called 'Curry House' in Chennai. That was the yummiest jalfrezi i ever had.

cooking time: 20 - 30 mins

INGREDIENTS:

  • Veggies of your choice - 3 cups (i used 3 small potatoes and 1 green capsicum)
  • tomatoes - 2 large
  • onion - 1/2 large
  • ginger and garlic paste - 1 tbsp
  • Turmeric powder - 2 tsp
  • red chilli / paprika powder - 1 tsp
  • coriander powder - 1 tsp
  • Sugar - 1/2 tbsp
  • Salt -  to taste
  • Garam masala powder - 2 tsp
  • Curd - 1/2 cup to 1 cup (depending on your preference)
  • Oil / ghee (clarified butter) - 1 tbsp
  • Cumin seeds - 1 tbsp
  • Paneer - 150 gm - 200 gm (around 15 cubes)

DIRECTION:

Cut the paneer and veggies into nice bite size pieces and keep it ready.

In a wok/pan heat oil once smoking to that add cumin seeds and wait for it to splutter. Then add in the some salt and veggie which will take time to cook, in my case i added potatoes.

(If you are using carrot, beans add them first

) and cover it with a lid and cook for 5 mins until its half done.

Then add in onion and ginger garlic paste and saute it for few minutes until onion turn into nice pink / translucent. Then add in capsicum and tomatoes and add all other spices (Turmeric powder, Chilli powder, coriander powder , sugar , salt and garam masala powder) give it a stir and cook until they are tender by occasionally stirring and adding water to that.

Do not add too much water because the gravy should just be coating the veggies and so try not make it watery.

Once the veggies are cooked finally add curd (the key ingredient) & give it a nice stir then add paneer and cover it with the lid for couple more minutes.

Serve Hot with

or paratha.
