Cauliflower Soup

I am a soup fan :) It is easier to cook and definitely easier than eating the vegetable :) For the last one month i have been including a serving of soup, salad or fruits before our meal :) Most of the days I made

I never posted any recipe after making it the first time , even it was wonderfully delicious. A lesson learnt from my husband :) When I found the Perfect recipe of the

tomato soup

that my husband liked, I immediately wanted to post in my blog. My husband told me that I can be a better cook only If i can recreate / redo the same recipe any number of times.

It was so true and from then i never posted recipes on my first attempt.

Preparation time: 5 mins

cooking time: 20 mins

serves - 2 cups

Ingredients:

  • Cauliflower florets - 2 cups
  • Sweet onion - 1 cup (chopped)
  • Almonds - 10 - 12 pieces (soaked in water over night)
  • Milk - 3 cups (Not Heavy Milk)
  • Green chilli - 1 small
  • salt - to taste
  • pepper - to taste

DIRECTION:

This is very simple and protein rich soup, If you have not almonds or couldn't soak almonds it can be substituted with cashew nuts.

In a heavy bottom pan, bring 2 cups of milk to boil then to that add cauliflower florets, onions, green chilli and soaked almonds and let it cook until the cauliflower florets are cooked and becomes tender.

Let it cool down a little then transfer it to a blender and blend until its smooth and creamy. Then strain it and transfer again to the pan now add milk if necessary or add salt and crushed pepper to taste and heat it in simmer for another couple of minutes.
