Aloo Gobi recipe | Potato cauliflower curry
Aloo gobi is a simple and delicious side dish for roti or chapathi. It is quick simple and easy to make. I love dry curry for my chapathi or ghee drenched phulkas.
This has very minimal spices and such a simple delicacy, I think everyone will have their own version. But this is how we like it.
Preparation time - 15 mins
cooking time - 15 - 20 mins
Serves - 4 to 5
Ingredients:
Ghee - 2 tbsp
Cumin seeds - 1 tsp
Turmeric powder - 1 tsp
Onion - 1/2 cup sliced
Garlic - 1 tbsp (minced)
Tomato - 1/4 cup diced
Potato - 3 cups (diced bite sized)
Cauliflower - 3 cups (Florets)
Salt - to taste
Red chilli powder - 2 tsp
Coriander powder - 4 tsp
Lime juice - a drizzle all over
Coriander leaves for garnish
Direction
In a heavy bottom pan, heat it and melt ghee. To that add cumin seeds, wait for it to splutter and add turmeric powder
Now to that add, sliced onion and saute for a minute
Then add diced garlic and saute until the raw smell is gone
To that add tomato and salt and saute for a minute
Now add diced potato and cover and cook until it is half done
When the potato is half cooked, add in the cauliflower florets
To that add cumin powder, red chilli powder and coriander powder
Stir well, add few table spoons of water. Cover and let it simmer for 10 mins until all flavor comes together.
Drizzle lemon juice and top it with coriander leaves.
