Coriander Lemon detox soup - Loaded with veggies - Instant pot soup recipe

My husband has started fasting once a day every week and this has been interesting, we have been having detoxifying soups like this. We absolutely love simple lemon coriander soup. This is my take on the classic recipe.

With little meal prep this soup can be put together in under 5 mins. I Chose things I had frozen and prepped. Like cooked chickpeas, mushrooms, bell peppers, corns and broccoli.

  • cooking time - 8 mins
  • serves - 3 to 4

 INGREDIENTS

  1. Onion - 1/3 cup | Diced
  2. Ginger - 1 tsp | Minced
  3. Garlic - 2 tsp (3 cloves) | Minced
  4. Green chilli - 1 long | Minced
  5. Mixed veggies - I used bell peppers, corns and broccoli. 
  6. Protein - Mushroom and cooked chickpeas
  7. Water / Broth - 3 cups (I personally prefer water for this recipe)
  8. coriander leaves - 1 cup (finely chopped)
  9. Lemon juice - 2 tbsp (1/2 lemon)
  10. Salt and pepper to taste

DIRECTION

Start the instant pot or the pot to saute. When the pot is add in diced onion, minced ginger, garlic and green chilli. Once the onion turns soft, add in water - 3 cups, veggies, coriander leaves. Salt and pepper to taste. 

Close the lid, set the instant pot to Soup - Low pressure - 8 mins - vent sealed. 

If you are cooking on stove top, cover with a lid and lower the heat and simmer for 15 mins.

When the pressure is naturally released, add in lemon juice. stir and enjoy with more coriander leaves on top.

Alternately if you don't like to chew on coriander leaves or bite on ginger or garlic. You can blend in coriander leaves, green chilli, ginger, garlic.
