Paruppu usili (Scrambled Lentil curry) | Beans Paruppu usili in microwave | How to make paruppu usili
Paruppu usili is a traditional south indian delicacy and it is a perfect accomplishment with Mor Kuzhambu. The literal translation of paruppu usili is scrambled Fried lentil. There are so many veggies like banana flower, cluster beans, green beans, beetroot, cabbage can be used for this recipe. I used green beans here. No matter what vegetable is used, it tastes yummyy :) and also its packed with so many nutrition.
Great way to include lentil in a different way. Variations are good, it keeps our life interesting, Don’t you think?

INGREDIENTS:
Green beans - 2 cups
Salt - to taste
Curry leaves
To Soak and Grind:
Toor Dal - 1/4 cup
channa dal - 1/4 cup
asafoetida - a generous pinch
salt to taste
Dried Red chilli - 3
Turmeric - 1/4 tsp
For Seasoning:
Oil - 1 tbsp (I used coconut oil)
Mustard seeds - 1 tsp
urad dal - 1 tsp
DIRECTION:
Soak toor dal and channa dal for an hour at least, mean while chop the veggie as small equal pieces as possible so that they are evenly cooked.
Once the lentil / dal is soaked. Add salt, turmeric powder, dried red chilli and grind together into a coarse batter.
In a microwave safe dish, generously apply coconut oil or any oil of your choice inside of the dish.
Cook the ground batter in microwave for 6 mins or based on your microwave power change accordingly.
Meanwhile on stove top, add water and salt to the beans and cook them without covering with the lid. Any green items cooked with the lids on looses its color.
Once the usili is cooked, flip roughly and microwave of 1 more minute.
Then once it reaches room temperature pulse in blender or a food processor to get a nice scramble or simply just scramble them with a fork or hand.
Once the beans is cooked, transfer them to a bowl and to the same pan, add oil and to that add mustard seeds and urad dal and wait for it to splutter, then again add in the beans and scrambled lentil and slowly fry them in a medium low flame for a couple of minutes
Finally dress them with some curry leaves.
Serve hot with mor kuzhambhu or vatha kuzhambhu
Note:
Adjust and add salt while cooking dal and veggie separately, it wont mix when you cook them together.
Make sure when the dal is pressure cooked / microwaved, it is neither liquid nor very solid
If you want to enhance the flavor you can go ahead and add a tsp of coconut oil when the lentil and veggies are cooking.
Mainly scramble the lentil real nice so that it looks like each piece of beans is covered with lentil
