A simple potato roast with vathakuzhambhu or curd rice is pure bliss. My husband can gobble up on this potato roast. This definitely will make its appearance in our sunday lunch ritual. Our usual sunday lunch menu includes chinna vengaya (pearl onion) sambhar or vathakuzhambhu, urulai (potato) roast, keerai (spinach) kootu, poondu (garlic) rasam and some pachadi. Although there are many ways to make potato fry, first steaming and then frying has always been the favorite in our household.

  • Oil - I use Peanut oil or avocado oil

  • Salt - to taste

  • Turmeric

  • Sambhar powder - 1 tbsp or Red chilli powder - 1 tsp

  • curry leaves to taste

  • Potatoes - 5 - 6 medium sized


DIRECTION

  1. First boil the potatoes until they are 70% cooked, which is cook them until they are soft to cut. No more, no less.

  2. I microwaved my potatoes for 7 mins with salt and water (Remember each microwave setting is different)

  3. Once its cooked, transfer it into cold water and let it rest for a couple of minutes.

  4. Then go ahead and cut each potatoes into bite size pieces. Do not remove the skin, that helps us get that crunchy crust.

  5. Now add 2 tbsp of oil and to that add salt, turmeric and red chilli powder (or sambhar powder) and mix well

  6. In a heavy bottom pan, add 2 tbsp of oil and shallow fry them in few batches on low flame.

  7. Once all the batches are roasted, once again mix all of them along with curry leaves and cover. Let it simmer on low flames for 2 mins.

Serve hot with any dish or as an appetizer.

Notes

  • If the potato is over cooked the skin would be peeled off. It also takes more oil to cook as it will have more water content

  • If the potato is under cooked, even after shallow frying it will be under cooked to the bite.

  • Remember to add salt while steaming the potatoes

  • You can adjust between sambar powder and red chilli powder based on your likings

  • Shallow frying on low flame is important to not to burn and speed cook the potatoes.
