Venn Pongal (Spicy White rice)

Venn Pongal is a traditional south indian breakfast recipe. It is spicy white rice cooked with herb, spices and Moong dal. It is one of the healthiest breakfast recipes which is easier to make as well

  • Preparation time: less than 5 mins

  • Cooking time: 20 mins

  • Serves : 2

INGREDIENTS:

  • Rice - little less than 3/4 cup

  • Moong Dal (split) - 1/4 cup

  • salt to taste

For Seasoning

  • Ghee - 4tbsp

  • cumin seeds - 1/4 tbsp

  • Whole black pepper - 8 - 10 seeds

  • Grounded Cumin seeds and black pepper - 1 tbsp

  • Cashew nuts - few broken

  • Ginger - 1 tsp minced

  • Curry Leaves - Few stands

DIRECTION:

  • For one cup of rice and dal add 3 1/2 cups of water , to that add salt as well and pressure cook it until fully mushy. You can also cook in the microwave high for around 20 - 23 mins or start instant pot in rice mode.

  • Meanwhile in a tadka, heat the ghee and roast cashew nuts. Once it's golden add in rest of the items for seasoning and saute for couple of minutes. Don’t let the spices burn

  • Once the rice is cooked add the spices in the tadka to it and mix well, pongal is ready to serve.

Note

  1. Increase the amount of water by half cup more while pressure cooking, than how much is used to make just rice.

  2. As soon as the pressure is released, mash it gently while it's still hot. Add more water if necessary at this stage.

  3. use ghee generously while mashing if necessary

It goes well with coconut chutneys, gotsu and sambar.
