Mixed Vegetable Kurma (Gravy)

I learned this recipe from my mother. This is a super simple and unbelievably delicious recipe. This goes great with many items like phulka, paratha, idiyappam (Rice noodle) , parotta, etc..

When you have some unexpected guests just go for this recipe. Believe me :)

Preparation time: 10 mins

Cooking time: 20 mins

Serves - 2

INGREDIENTS:

  • Mixed Veggie's - 3 to 4 cups (I used Carrot, Capsicum, Green Beans, Potato)

  • Oil - 2 tbsp (coconut oil preferred)

  • Tomato - 1 large finely chopped

  • Small onions / pearl onions - 1/2 cup peeled and diced

  • Coriander leaves - few strands

  • Green chilli - 3 small

  • Shredded coconut - 4 tbsp

  • Salt - to taste

DIRECTION:

In a sauce pan add 2 cups of water and salt to taste and cook the veggies until they are tender.

Meanwhile to make the gravy keep tomato, pearl onions, coriander leaves and green chilli ready. In a small frying pan, add oil and saute onions for a minute then add in tomato, green chilli and mix well. Saute them until they become tender and the raw smell goes. Once they are cooked add coriander leaves and coconut to that and switch off the stove.

Transfer the mixture to a blender and grind into a nice smooth paste. Then add them to the cooked veggies and mix well.

Add water if required, and cook them for 2 to 3 mins. Can also add coconut milk at this stage for added flavor.

Yummy mixed vegetable kurma without any ginger garlic paste or masala is prepared in no time.
